I’ve been trying to eat a lot more whole foods lately and I think I’ve hit on a magic bullet. Instead of always having to chop up vegetables everytime I want to eat, I chopped all of them up and put them in a big pot. Now I just cut up some baked chicken breast, a few handfuls of spinach and a cup of vegetables… add some dressing and voila: Lunch! Of course – this only works if you don’t mind having the same vegetables each time – in this case: asparaugs (mom will flip when she here’s I’m eating that now), celery, green peppers, parsley and onions. I’m still trying to get into tomatoes. I just can’t eat them alone. The texture makes me feel funny.
Did anyone else hear the audio of Tony Blair getting boo-ed down in Parliament? Ouch.
